Olive oil is a spice in and of itself.
Fruity, green, sweet, bitter, peppery, hot, there is not one but many olive oils. The particularities of the land, and the type of olive, are apparent in the color of the oil which ranges from sunny yellow to emerald green. The uniqueness of the oils are also revealed in their aromas: artichoke, green apple, freshly cut grass or toasted bread. For many years we have gathered together a selection of the greatest olive oils from different regions of the Mediterranean--Andalusia, Provence, Tuscany, Sicily, Crete, Peloponnese, Galilee--our voyage determined by the harvest calendar.
